New Zealand scientists are working to develop an apple that combines the flavour and quality consumers expect with significantly higher levels of vitamin C, in a breeding programme that could eventually add a more nutritious variety to supermarket shelves.
Scientists Work to Boost Vitamin C in Apples
Despite their long-standing reputation as a healthy snack, apples are not generally a significant source of vitamin C compared with many other fruits.
At the Bioeconomy Science Institute, formerly known as Plant & Food Research, researchers are attempting to change that by breeding apples that retain desirable eating qualities while containing higher levels of the vitamin.
Senior tree crops scientist Ben Orcheski is part of the team working on the project.
“The problem is that all the good tasting apples have no vitamin C, and the apples that have high vitamin C are just not very good quality,” Orcheski said.
The challenge for breeders is therefore to bring the two characteristics together: the flavour, texture and overall quality expected from a commercial apple, alongside substantially improved vitamin C content.
High-Quality Prototype About Five Years Away
The research team is estimated to be about five years away from producing a good-quality prototype apple with high vitamin C levels.
Developing a new apple variety is a lengthy process. Breeders must assess successive generations of trees and fruit to determine whether desirable characteristics remain stable and whether the resulting apples meet commercial quality standards.
Balancing Nutrition With Taste
For consumers, nutritional value is only one consideration when choosing fruit. Apples also need to deliver the sweetness, acidity, crispness, appearance and storage qualities that shoppers have come to expect.
That balance is particularly important for New Zealand’s apple sector, which has built an international reputation around premium fruit varieties and export-quality production.
Creating an apple with elevated vitamin C therefore involves more than simply selecting fruit with the highest nutrient levels. Researchers also need to ensure the finished variety has the characteristics required to appeal to growers, retailers and consumers.
Apple Breeding Remains Important to New Zealand Horticulture
New Zealand has a strong history of apple breeding and horticultural science, with locally developed varieties contributing to both the domestic market and the country’s horticultural exports.
Research into traits such as flavour, appearance, disease resistance, storage performance and nutritional qualities can help the sector respond to changing consumer expectations.
A successful high-vitamin C apple could add another point of difference for New Zealand-grown fruit, particularly as consumers increasingly consider nutritional characteristics alongside taste and convenience.
From Research Orchard to Supermarket Shelf
Even after researchers produce a promising prototype, further evaluation would be required before any new apple could reach commercial orchards.
Potential varieties need to perform reliably under growing conditions, produce fruit of consistent quality and withstand harvesting, storage and transport. For an export-focused industry such as New Zealand’s, maintaining quality throughout the supply chain is particularly important.
Consumer acceptance would also be critical. A nutritionally enhanced apple would still need to compete with established varieties that shoppers already recognise and enjoy.
A Healthier Apple Remains a Long-Term Goal
The Bioeconomy Science Institute’s work highlights the complexity involved in improving the nutritional characteristics of a familiar fruit without sacrificing the qualities that make it popular.
With researchers still several years away from a high-quality prototype, the project remains a long-term breeding effort. If scientists can successfully combine elevated vitamin C with good flavour and commercial performance, however, New Zealand could eventually have an apple that gives the familiar “apple a day” saying a stronger nutritional foundation.
